Gluten & Dairy Free Protein Banana Oat Bread (Large Batch)

Whether youโ€™re pregnant, needing a go-to snack for labor, or a busy breastfeeding mama, this large batch of banana bread is easy to make and is a favorite from my toddler to my husband. Letโ€™s just say even the large batch doesnโ€™t last long in our house.

Ingredients

6 mashed medium organic bananas

1/2c organic agave or organic maple syrup

4 large pasture-raised eggs

1/2 c melted organic coconut oil

1c Arbonne vanilla protein

2c almond flour

2c gluten-free rolled oats

1c gluten-free oat flour 

2 tsp baking soda

2 tsp baking powder

2 tsp cinnamon

1 tbsp nutritional yeast

1/2c dark or dairy-free chocolate chips or blueberries (optional)

Directions

  1. Preheat your oven to 375F and line a 13x9 in baking dish with parchment paper. Mash bananas and mix wet ingredients in a bowl.

  2. Fold in dry ingredients until thoroughly mixed. Fold in chocolate chips or blueberries last.

  3. Spread batter in your dish evenly and bake for 35 minutes or until the top is a golden brown.

  4. Enjoy!
