Whether youโre pregnant, needing a go-to snack for labor, or a busy breastfeeding mama, this large batch of banana bread is easy to make and is a favorite from my toddler to my husband. Letโs just say even the large batch doesnโt last long in our house.
Ingredients
6 mashed medium organic bananas
1/2c organic agave or organic maple syrup
4 large pasture-raised eggs
1/2 c melted organic coconut oil
2c almond flour
2c gluten-free rolled oats
1c gluten-free oat flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tbsp nutritional yeast
1/2c dark or dairy-free chocolate chips or blueberries (optional)
Directions
Preheat your oven to 375F and line a 13x9 in baking dish with parchment paper. Mash bananas and mix wet ingredients in a bowl.
Fold in dry ingredients until thoroughly mixed. Fold in chocolate chips or blueberries last.
Spread batter in your dish evenly and bake for 35 minutes or until the top is a golden brown.
